6 ingredients to an AWESOME lunch

As the weather turns nicer, and our thoughts turn to getting outside, field trips to the zoo, lunches at the park, etc.  Planning portable and healthy meals can be a challenge.

These quick and yummy, either warm or cold, roll ups are just the ticket! Portable, easy for little hands to hold, and completely customizable based on needs and what you have in the house!


Ingredients (per roll up/wrap):

*Notes for dietary adjustments made in blue*

1 tortilla (GF if needed, otherwise whole grain)

1 egg (omit for egg allergies)

1 TBSP or slice of deli meat – turkey or ham (use black or brown beans for vegetarians)

1 TBSP grated cheese (use Diaya brand for dairy allergies)

1 TSBP mild salsa (or spicy if you like it that way!)

Veggies of choice – I do peppers and mushrooms – diced

Warm tortillas in the oven or microwave

Scramble together egg, meat, cheese and veggies (I like to pre-cook the veggies so they are soft and easier to eat).   

Place in centre of warmed tortilla and top with salsa.  Roll up and hold in place with a toothpick (especially if travelling!)

These can easily be made the night before and quickly warmed in the microwave for lunch. Wrap each roll up in tinfoil for little hands, in order to avoid “My wrap fell apart!!” meltdowns.
