Please, anything BUT a sandwich!!

“I like sandwiches, sandwiches are fine. I like sandwiches, I eat them all the time…”   While Raffi may sing about liking sandwiches, sometimes, we just get plain tired of them.  But they are SO easy to make!  So what to do instead?

One of the alternatives that my kids love is Chicken Waldorf Salad. I have to omit the nuts for them, but I just add them back for myself :). Its a super easy way to get protein, fruits and veggies in all at once!  And with the chopped up ingredients, easy for babies who are just starting to finger feed themselves to eat as well!

IMG_0638How to make:  Chop up cooked chicken, about 2 cups, depending on how many you are feeding.

Chop up 1 -2 apples, 1-2 cups of grapes and 1 -2 stalks of celery

Mix all together in a bowl.

Dressing: 2 tablespoons mayonnaise, 2 tablespoons greek yogurt, 2 tsp lemon juice and 1 tsp honey. Mix well. Pour over salad, mix all together and VOILA

The amount you see here fed 3 good sized salads.
